Simple stick bread recipe

Ingredients for 6 portions of stick bread

  • 300 g wheat flour, type 550
  • 100 g rye flour, whole grain
  • 1 tsp. salt
  • approx. 8 g active dry yeast
  • 15 g yeast, fresh
  • 1 tsp. sugar

Preparation stick bread

Step 1
Prepare the dough
Mix both types of flour with the salt in a bowl and make a well. Mix sourdough, yeast and sugar with 75 ml lukewarm water and pour in. Dust with a little flour from the edge and let rise for about 15 minutes. Then add another 150 ml of lukewarm water and knead everything into a smooth dough that no longer sticks. If necessary, add a little more water or flour. Cover and let rise in a cool place for about 4 hours.

Step 2
Shape the dough and grill
Divide dough into six pieces, shape into long strands and wrap around sticks.
Grill over open fire for 15-20 minutes, turning constantly.

Ready in: about 5 hours (including 4 hours 15 minutes resting time).

The best sticks for stick bread

Hazelnut, willow and beech wood are ideal. Important: Stay away from yew or elder, they are poisonous. Suitable sticks can be bought at the hardware store. Also at the local carpenter there are often cheap wood scraps. Before grilling, sharpen the end of the stick with a sharp knife and remove the bark. The sticks can be used several times.
