Vegan bowl with peanuts and pasta

Ingredients
for 2 servings
For one vegan bowl
– 250 g spaghetti
– 6 tbsp. coconut milk
– 3 tbsp. peanut butter
– 2 tsp agave syrup
– 1 carrot, finely diced
– 1/2 red paprika, finely diced
– 2 spring onions, cut into rings
– 1/2 bunch parsley, chopped
– 1 small piece of ginger, grated
– 1 clove garlic, finely chopped
– 1 handful peanuts, coarsely chopped
– 1 tablespoon soy sauce Shoyu
– 1 tbsp. lime juice
– 2 tsp. sesame oil
Preparation
For a vegan bowl
Step 1
Cook spaghetti in boiling salted water for 8 minutes.
Step 2
Heat sesame oil in a small pot. Sauté garlic and ginger in it. Add peanut butter and deglaze with coconut milk. Stir well and season with soy sauce, honey and lime juice.
Step 3
Drain the spaghetti and immediately mix with the sauce. Finely dice the vegetables. Arrange the noodles and vegetables in a bowl.
Step 4
Finally, sprinkle the dish with nuts and parsley and enjoy.
