Ingredients

for 25 servings

For Vegan Linzer Stars:

  • 150 g soft plant-based margarine
  • 75 g coconut blossom sugar
  • ½ tsp ground Bourbon vanilla
  • a pinch of salt
  • 150 g ground almonds
  • 175 g all-purpose flour (Type 405) and additional flour for processing
  • approx. 125 g raspberry fruit spread
  • 2 tbsp powdered sugar for dusting

Preparation

For Vegan Linzer Stars

Step 1
Beat soft margarine and coconut blossom sugar until creamy. Stir in Bourbon vanilla and a pinch of salt. Grind almonds, add flour, and briefly stir. Knead into a smooth dough. Flatten the dough ball slightly and wrap it in plastic wrap. Chill for 2 hours.

Step 2
Preheat the oven to 180°C / 356°F conventional or 160°C / 320°F convection. Line two baking sheets with parchment paper. Roll out the dough thinly on a lightly floured surface and cut out approximately 50 large stars. From half of the stars, cut out a small star in the center. Bake the stars in the middle of the oven for 8-10 minutes until golden yellow.

Step 3
Stir the raspberry fruit spread until smooth and spread about ½ teaspoon on the bottom stars. Sandwich with the top stars and dust the cookies with powdered sugar.
